What does assistant_service do?
assistant_service is a per-user Siri helper in AssistantServices.framework that executes Siri commands and plugins after speech capture, working alongside assistantd. launchd starts the com.apple.assistant_service LaunchAgent when speech capture finishes or when Siri’s execution and plugin Mach services are needed. You need it for in-flight Siri requests to complete; quitting interrupts that work until relaunch. Turn Siri off in Settings if you do not want these helpers.
